Bromelain is a combination of two proteases (protein-digesting enzymes) extracted from the pineapple plant. All parts of the plant contain bromelain, but the highest concentration lies within its stem. It is the bromelain enzyme why pineapple juice is commercially known to tenderise meat. It is until in 1957 that the therapeutic effects of this pineapple enzyme were discovered. Consisting of proteolytic enzymes, Bromelain extract is able to divide or simplify proteins by separating amino acids.
